Celebration and Wedding Cake Flavours 2023/24
All my cakes are freshly made and bespoke.
The flavour options are:
- Vanilla sponge filled with raspberry jam and whipped vanilla buttercream/Belgian white chocolate ganache
- Chocolate sponge filled with whipped milk, plain or white Belgian chocolate ganache
- Lemon sponge, drizzled with fresh lemon syrup and filled with whipped lemon curd buttercream/Belgian white chocolate ganache
- Raspberry and white chocolate sponge filled with raspberry jam and whipped vanilla buttercream/Belgian white chocolate ganache
- Red Velvet filled with whipped vanilla buttercream/Belgian white chocolate ganache
- Coffee sponge filled with whipped coffee buttercream/Belgian white chocolate ganache
- Lime sponge, drizzled with homemade elderflower cordial and filled with whipped lemon buttercream/Belgian white chocolate ganache
- Carrot cake drizzled with fresh orange syrup and filled with whipped vanilla buttercream/Belgian white chocolate ganache
- Chocolate sponge filled with Terry’s chocolate orange ganache
- Caramel sponge filled with salted caramel buttercream/Belgian white chocolate
and
- Luxury fruit cake with brandy, covered with natural coloured marzipan and fondant iced
If the cake is to be a ‘semi-naked cake’ or covered in buttercream, this would be a whipped vanilla buttercream with white chocolate ganache for a delicious flavour. It will also contain instant Royal icing mix to make it more stable as the room temperature increases in the summer months.
Cakes that are designed to be covered in sugarpaste will be crumb coated in Belgian milk, dark or white chocolate ganache as this provides a firm surface for the cake to be covered. I use Couture sugarpaste which provides good coverage with sharp edges and a better flavour than some other high-end brands.
